Berry Summer Salad

I was excited to harvest the very first offerings from my spring lettuce mix! With some fresh strawberries in the fridge and some motivation to make a new dressing--- behold, this salad was born.


This salad is sweet, tangy, fresh and perfectly paired with an orange chicken entree, grilled chicken, on it's own, or any other way you fancy.





Berry Summer Salad


Lettuce (Any kind will do. Homegrown is best!)

Fresh chopped basil (As much or little as you want)

Sliced strawberries

Handful of fresh or dried blueberries



Lemon Vinaigrette:

Mason jar

1/4 red wine vinegar

2 tablespoons dijion mustard

1 clove of garlic minced

Some fresh oregano (a couple sprigs worth)

Dash of salt

Dash of pepper

1/4 cup olive oil

1/4 cup lemon extra virgin olive oil (if don't have this, use 1/2c. olive oil and add 2 tablespoons of fresh lemon juice)



Wash and dry lettuce and put in a serving bowl. Chop bigger pieces of basil and mix with lettuce. I just ripped it with my hands. (less dishes ;) Mix in blueberries and strawberries (use as many as you want) Mix vinaigrette ingredients in a mason jar, secure lid, shake, and pour desired amount in the salad bowl or individually on your plate. Enjoy.
